1. Take the butter out 1 hour in advance at room temperature.
2. Once the butter is softened, add the sugar and whisk until creamy.
3. Add the sifted flour, baking powder, lemon zest, and vanilla extract.
4. Crack the egg over the mixture and add the milk. Mix everything with a wooden spatula, then finish by forming a ball with your hands.
5. Chill the dough for 2 hours.
6. Preheat the oven to 425°F for 10 minutes.
After the 2 hours of resting, roll out the dough on a lightly floured surface using a rolling pin. Roll it to about 1/4 inch thick. Use a cookie cutter to make shapes about 4 inches in diameter. Place the cookies on a baking sheet lined with parchment paper.
Brush the shortbread with beaten whole egg and decorate them with shallow lines. Bake for 15 to 20 minutes, keeping an eye on the cooking process.
In an air fryer, cook at 320°F for 8 minutes.
Remove them from the oven and let them cool before enjoying.
