Instructions

  • 1.   For the crepes: prepare the pancake batter by mixing the flour and milk.
  • 2.   Let it rest for several hours at room temperature.
  • 3.   Add salt when using it.
  • 4.   Cook the crepes in a greased pan (grease it lightly again for each new crepe).
  • 5.   For the bechamel sauce:

    Melt the butter in a thick-bottomed saucepan.
  • 6.   Add the flour and stir with a wooden spoon without letting it brown. The flour should just thicken.
  • 7.   Gradually pour in the milk, stirring constantly, until the sauce thickens.
  • 8.   Season with salt, pepper, and grated nutmeg.
  • 9.   For the filling:
    Place a slice of ham, some mushrooms, and grated comte cheese on each crepe.
  • 10.   Roll up the crepes and place them in a greased gratin dish.
  • 11.   Cover with bechamel sauce, sprinkle with bacon bits.
  • 12.   Bake for 25 minutes in an oven at 180°C (350°F), then 10 minutes at 220°C (425°F).

    In an air fryer, cook for 12 minutes at 160°C (320°F).

  • 250 g of buckwheat flour
  • 50 cl of milk
  • Béchamel :
  • 40 g of butter
  • 500 g of milk
  • ½ teaspoon of salt
  • 40 g of flour
  • 1 pinch of nutmeg
  • 2 pinch of pepper
  • Garniture :
  • 250 g of Comté cheese
  • 100 g of bacon strips
  • 6 slice of ham
  • 150 g of button mushroom
