1. Preheat the oven to 200°C (400°F).
Peel and thinly slice the onions, then gently caramelize them in a little olive oil.
Transfer them to an ovenproof dish and place the fish fillets on top.
In a bowl, mix together the cream, curry, ginger, and maple syrup.
Season the fish with salt and pepper, then pour the flavored cream over it.
Bake for 15 to 20 minutes, depending on your desired level of doneness.
