1. Crack the eggs directly into a pan with butter over medium heat.
! Do not mix the eggs before starting cooking.
! Add the butter at the very beginning, with the whole eggs.
2. Stir with a wooden spoon for a few seconds and add the cream.
! Do not add salt before, but once the preparation is finished.
4. Stir until cooked. Season and serve (Topped with tomato coulis and a green salad, it's excellent).
For fans, tomato coulis can be easily replaced with ketchup!
! Just like with risotto, continuously monitor the cooking of the scrambled eggs. Occasionally remove the pan from the heat source to mix well and prevent the preparation from drying out too much.
