Fresh Tomato Vinaigrette (with salad)

The best way to use our overripe tomatoes with this homemade vinaigrette! Not too oily, the tomatoes give a nice texture and a good little taste!

Instructions

  • 1.   Choose your vinegar: balsamic, cider, red wine... according to your desires and preferences.
    Choose your herbs: chives, parsley, basil, oregano...
  • 2.   Roughly chop garlic, shallot, and herbs.
    For a smoother texture, you can also place the tomatoes in boiling water for 30 seconds to 1 minute, refresh under cold water, then peel and seed them. (we are not doing this step here)
  • 3.   In a blender, mix all the ingredients. Season with salt and pepper.
    Adjust to your taste and add water if it seems too thick (You can also choose to vary by adding a tablespoon of soy sauce, Maggi sauce, maple syrup... be inventive!)
    Blend again.
  • 4.   Serve on mâche lettuce, lettuce, raw vegetables, or even a cold vegetable terrine...

  • Vinaigrette à la tomate :
  • 2 tomatoes
  • ½ shallots
  • 1 garlic clove
  • 10 ml of Dijon mustard
  • 40 ml of vinegar
  • 60 ml of olive oil
  • 2 tablespoon of fresh parsley
  • 16 g of dried oregano (optional)
  • 8 g of fine herbs (optional)
  • Accompagnement :
  • 200 g of lettuce (optional)
  • 200 g of cucumber (optional)
