Banana peel and chocolate chip cake

Instructions

  • 1.   Preheat your oven to 220°C (425°F).

    Cut off the ends of the banana peels and wash them thoroughly.

    Pour water into a saucepan and add the banana peels. Heat over medium-high heat, stirring regularly, until all the water has evaporated.

    Blend the banana peels and set aside.

    Separate the egg whites from the egg yolks.

    Whisk the egg yolks with the softened butter and sugars.

    Add the flour, baking powder, and blended banana peels to the mixture.

    Beat the egg whites until stiff peaks form, then gently fold them into the batter.

    Finish by adding the chocolate chips.

    Pour the batter into a greased and floured cake mold, or line it with parchment paper like I did, and bake for 30 minutes.
