Pear Fondant Cake

Instructions

  • 1.   In a bowl, put the sugar, 2 eggs, and a pinch of salt. Whisk the mixture until it becomes frothy and forms a ribbon when you lift the whisk.
  • 2.   Incorporate the flour and baking powder, then dilute the batter with milk and oil. Preheat the oven to 180°C (350°F), gas mark 4.
  • 3.   Pour half of the batter into a 24 cm (9 inch) diameter mold, previously buttered and floured. Peel and core the pears, then cut them into slices. Arrange them on the batter as you go. Pour the second half of the batter. Bake for 30 minutes.
  • 4.   Prepare the finishing mixture. Melt the butter over low heat. In a bowl, whisk the egg with the sugar, and when the mixture is perfectly homogeneous, incorporate the melted butter.
  • 5.   After 30 minutes of baking, remove the cake from the oven and pour this mixture on the surface. Place the cake back in the oven and continue baking for another 20 minutes. Let the cake cool in the mold.
