Mushroom sauce for steaks

Instructions

  • 1.   Gently cook the mushrooms in a little butter.
  • 2.   Discard three-quarters of the cooking juice and season with salt and pepper.
  • 3.   Add parsley and garlic.
  • 4.   Pour in Cognac and flambé.
  • 5.   Slowly add the heavy cream while allowing it to thicken.
  • 6.   Sprinkle with a teaspoon of veal stock and stir.
  • 7.   Adjust according to taste.
