Light Raspberry Mousse

Instructions

  • 1.   Soak the gelatin sheets in a bowl of cold water. Set aside a few raspberries for decoration. Blend the rest into a smooth puree. Prepare a syrup with the tablespoons of aspartame and 10 cl of water, and bring to a boil. Remove from heat and add the well-drained gelatin.
  • 2.   Mix until completely dissolved. Strain the mixture and add it to the raspberry puree. Then incorporate the cottage cheese and mix well. Whip the cold heavy cream until stiff peaks form.
  • 3.   Split the vanilla bean lengthwise and scrape out the seeds with the tip of a knife into the raspberry mixture. Divide the light mousse into individual cups, then add a dollop of whipped cream and decorate with raspberries. Serve chilled.

  • 20 cl of light cream (12-15%)
  • 4 leaf of gelatin
  • 1 vanilla bean
  • 2 tablespoon of sugar
