1. Preheat the oven to 180°C (350°F). Boil the milk with turmeric in a large pot. Add the cauliflower and cook for about 13 minutes (a little longer if it's fresh). Then add the mussels, cream, salt, pepper, and semolina to bind the mixture.
2. Pour the mixture into a greased gratin dish using cooking spray and sprinkle with grated gruyère cheese. Bake in the oven for 15 minutes until golden brown.
