Stir-Fried Shrimp with Crispy Vegetables and Noodles

Instructions

  • 1.   Peel and devein the garlic cloves, then chop them. Chop the parsley. Peel and finely slice the leeks and onions. Rinse and dry the cherry tomatoes. Cut them in half. Remove the earthy end of the mushrooms, then rinse and peel them.
  • 2.   Heat the oil in a wok. Stir-fry the shrimp with the chopped garlic and parsley over high heat for 6 minutes, turning the shrimp halfway through cooking.
  • 3.   Add the pre-cooked noodles to the wok, then gradually add the vegetables and Herbes de Provence. Season with salt and pepper to taste and continue cooking for about 8 minutes over low heat, gently stirring throughout the cooking process. Serve immediately.
