Stuffed Avocado with Quinoa 🟢

Instructions

  • 1.   Wash and remove the stem from the tomato. Cut it into small cubes.
  • 2.   Drain the corn.
  • 3.   Clean and chop the onion.
  • 4.   Mix the quinoa, tomato cubes, corn kernels, and chopped onion in a bowl.
  • 5.   Add lemon juice, water, and a pinch of sugar. Season with salt and pepper.
  • 6.   Chill in the refrigerator until ready to serve.
  • 7.   When ready to serve, cut the avocados in half and remove the pits.
  • 8.   Stuff them with the quinoa mixture.
  • 9.   Serve immediately.

  • 100 g of corn (small can)
  • 1 onion
  • 10 cl of lemon juice
  • 3 tablespoon of water
  • 1 pinch of powdered sugar
