Moroccan-style Zucchini

Instructions

  • 1.   Wash the zucchini and slice them into thin strips using a mandoline, without peeling them.
  • 2.   Finely chop the onion. In a bowl of hot water, soak the raisins.
  • 3.   In a skillet with a lid, place the zucchini slices with a drizzle of olive oil. Cover and cook over low heat, stirring occasionally, for 10 minutes.
  • 4.   Remove the lid and add salt, onion, soaked raisins, tomato sauce, cinnamon, and cook for an additional 5 minutes.
