Instructions

  • 1.   Rinse the cauliflower leaves. Remove the stems.
  • 2.   Blanch the leaves in boiling water for about ten minutes. Drain them well.
  • 3.   Finely chop them with a knife and set aside.
  • 4.   Peel, wash, and cut the potatoes and sweet potatoes into pieces.
  • 5.   Steam them for 10 to 15 minutes, until they are tender.
  • 6.   Mash them with a fork.
  • 7.   Slice the onion and sauté it with the cauliflower leaves in a little olive oil until the vegetables are lightly golden. Add the minced garlic towards the end of cooking to prevent it from burning.
  • 8.   Mix the mashed potatoes and the vegetable sauté. Add a small bunch of chopped parsley and mint, as well as cumin. Season with salt and pepper.
  • 9.   Preheat the oven to 180°C (350°F).
  • 10.   Make the samosas. Cut a sheet of phyllo dough in half. Take one half. Fold the rounded side over to the right side. Place a spoonful of filling at the bottom of the sheet. Fold the sheet over the filling to form a triangle. Continue folding in a triangle shape until there is a small piece of sheet left, which you will then tuck into the samosa to close it. Repeat these steps with all the phyllo sheets.
  • 11.   Brush the samosas with olive oil. Place them on a baking sheet and bake in a preheated oven at 180°C (350°F) until the samosas are golden brown. Flip them halfway through cooking to brown the other side.
