1. Rinse the cauliflower leaves. Remove the stems.
2. Blanch the leaves in boiling water for about ten minutes. Drain them well.
3. Finely chop them with a knife and set aside.
4. Peel, wash, and cut the potatoes and sweet potatoes into pieces.
5. Steam them for 10 to 15 minutes, until they are tender.
6. Mash them with a fork.
7. Slice the onion and sauté it with the cauliflower leaves in a little olive oil until the vegetables are lightly golden. Add the minced garlic towards the end of cooking to prevent it from burning.
8. Mix the mashed potatoes and the vegetable sauté. Add a small bunch of chopped parsley and mint, as well as cumin. Season with salt and pepper.
9. Preheat the oven to 180°C (350°F).
10. Make the samosas. Cut a sheet of phyllo dough in half. Take one half. Fold the rounded side over to the right side. Place a spoonful of filling at the bottom of the sheet. Fold the sheet over the filling to form a triangle. Continue folding in a triangle shape until there is a small piece of sheet left, which you will then tuck into the samosa to close it. Repeat these steps with all the phyllo sheets.
11. Brush the samosas with olive oil. Place them on a baking sheet and bake in a preheated oven at 180°C (350°F) until the samosas are golden brown. Flip them halfway through cooking to brown the other side.
