Vegan chocolate mousse

Instructions

  • 1.   Take 150 ml of chickpea juice, whisk it with a mixer in a bowl. When the mixture starts to become frothy, gradually add the sugar to "tighten" the chickpea juice.
    Melt the chocolate (in a double boiler or microwave), it should be liquid but not too hot (let it cool to room temperature).
    Mix the melted chocolate and whipped chickpea juice together, whisking well. Be careful, the chocolate may tend to sink to the bottom of the bowl, so make sure to scrape it well!
    Add vanilla and sea salt, transfer to a large bowl or individual ramekins and refrigerate for at least 4 hours. The mousse will set and thicken.

  • 150 ml of chickpea juice
  • 60 g of sugar
  • 1 bag of vanilla sugar
  • salt (according to taste)
