1. Start by dissolving the yeast in the milk. Mix well to fully dissolve it.
2. In your mixer, add the flour and the zest of the lemon and orange.
3. Add the whole eggs, granulated sugar, vanilla sugar, and a pinch of salt.
4. Start your mixer and begin kneading.
5. Add the milk and yeast. Then add the butter in small pieces and the orange blossom water.
6. Let it knead for 10 minutes. Your dough should come away from the sides.
Cover with a cloth and let it rest for 4 hours.
7. Flour your work surface and work the dough for a few more minutes to remove the air. Divide your dough into two equal balls.
8. Butter a piece of parchment paper and place your two dough balls on it. Put it on your baking sheet. Cover with a cloth and let it rest for another two hours.
9. Dilute 1 tablespoon of water in the egg yolk. Mix. Brush with the egg yolk. Sprinkle with sugar grains and bake in the center of your preheated oven at 180°C for 25 minutes.
