Lamb and Zucchini Tajine

Instructions

  • 1.   Sear the meat in a little oil.
  • 2.   Add all the spices and let them brown for a few minutes over low heat.
  • 3.   Cover with water until it reaches the level of the meat.
  • 4.   Cover and simmer for 45 minutes.
  • 5.   Add the zucchini, cut in half and then into quarters lengthwise.
  • 6.   Allow an additional 15 minutes of cooking over low heat.
