Chocolate Vanilla Marble Muffins

Instructions

  • 1.   Preheat the oven to 180°C (350°F). Grease and flour the mini loaf pans or place muffin liners in the pans.
  • 2.   In a bowl, beat the sugar and eggs until the mixture becomes pale and doubles in volume.
  • 3.   Gradually pour in the oil and milk.
  • 4.   Mix in the flour and baking powder. Divide the batter into ⅔ and ⅓ portions. Add vanilla extract to the first portion and cocoa to the second portion (if the batter is too thick, add 1 tablespoon of milk at a time to thin it out and make it easier to marble).
  • 5.   Pour a layer of vanilla batter and add a small amount of cocoa batter. Repeat the process for a second layer.
  • 6.   Use a toothpick to create a random swirling motion to achieve the marble effect.
  • 7.   Bake for approximately 20 minutes or until a toothpick inserted into the center comes out clean.

  • 8.   Remove from the pans and cool on a wire rack.

  • 220 g of Type 45 flour
  • 120 g of sugar
  • 4 eggs
  • 100 ml of milk
  • 100 ml of vegetable oil
  • 1 bag of baking powder
  • ½ teaspoon of vanilla extract
  • 1.5 tablespoon of 100% cocoa
