Zucchini salad

Instructions

  • 1.   Cut the zucchini in half lengthwise.
    Remove the seeds.
    Grate lengthwise using a mandoline or a peeler.
  • 2.   Empty and slice the bell pepper.
  • 3.   Cut the mozzarella ball into small cubes.
  • 4.   Make a vinaigrette with mustard, oil, and vinegars.
  • 5.   Put all the ingredients in a salad bowl and sprinkle with chopped mint.
    Chill in the refrigerator for at least 30 minutes.

  • 1 yellow bell pepper
  • 2 sprig of fresh mint
  • 1 mozzarella ball
  • 2 tablespoon of Sherry vinegar
  • 1 tablespoon of wine vinegar
  • 1 tablespoon of avocado oil
  • 1 teaspoon of mustard
  • salt (according to taste)
  • pepper (according to taste)
