1. The day before, soak the lentils and chickpeas separately in 3 times their volume of water with baking soda.
The next day, drain them and put everything in a food processor.
2. Add all the seasonings (onion, garlic, paprika, vanilla, parsley, and coriander) to the obtained mixture and mix.
3. Pour the flour onto a plate. Heat the oil in a small wok or deep fryer.
Shape the mixture into oblong balls and roll them in the flour, then fry them until golden.
Repeat until all the mixture is used.
4. Clean the vegetables for the salad and cut them into large cubes. Arrange them in a large dish coated with hummus.
Sprinkle with mint, drizzle with olive oil and lemon.
5. Place the fried balls on top.
