BULGUR AND FETA HERB SALAD

Instructions

  • 1.   Place the bulgur in a container and pour boiling water over it until covered. Let it sit until the water is absorbed. If you want the bulgur to be more fluffy, steam it for 5 minutes.
    Spread it on a plate and let it cool.
  • 2.   Mix olive oil, lemon juice, parsley, and mint in a salad bowl. Season with salt and pepper. Add chickpeas, tomatoes, onion, and bulgur.
  • 3.   Dice the cucumber and mix it with the other ingredients in the salad bowl. Add diced feta and gently toss. Serve immediately.

  • 2 tablespoon of fresh parsley
  • 1 tablespoon of fresh mint
  • 200 g of dried chickpeas
  • 125 g of cherry tomato
  • 1 tablespoon of onion
  • 100 g of cucumber
  • 150 g of feta
  • salt (according to taste)
  • pepper (according to taste)
