Zucchini and Broccoli Dahl

Instructions

  • 1.   Heat olive oil in a saucepan. Add the onion, broccoli, and zucchini and sauté for 5 minutes.
  • 2.   Add the lentils, tomatoes, coconut milk, garlic, curry, and enough water to cover. Bring to a boil, then reduce heat and cook for 10 minutes. Add a little water if needed during cooking.
  • 3.   Meanwhile, cook the rice according to package instructions.
  • 4.   Place the rice at the bottom of the plates, add the dahl, and drizzle with lime juice and coriander.

  • 150 g of broccoli
  • 150 g of red lentil
  • 2 tomatoes
  • 40 cl of coconut milk
  • 1 teaspoon of garlic powder
  • 1 tablespoon of curry powder
  • 200 g of basmati rice
  • 15 ml of lime
  • 1 tablespoon of fresh coriander
  • salt (according to taste)
  • pepper (according to taste)
