Japanese Fluffy Pancakes

Instructions

  • 1.   Step 1:
    Separate the egg yolks from the egg whites.
    Set aside the egg whites.
  • 2.   Step 2:
    Pour in the milk, oil, and mix well with a whisk.
  • 3.   Step 3:
    Add the vanilla extract. Whisk well until the mixture becomes pale and frothy.
  • 4.   Step 4:
    Add the sifted flour and mix. The batter should be slightly thick.
  • 5.   Step 5:
    In a separate bowl, add the 2 egg whites and an additional third one.
  • 6.   Step 6:
    Add the white vinegar. Beat the egg whites until stiff peaks form, gradually adding the sugar.
  • 7.   Step 7:
    Once the egg whites are beaten, carefully pour them into the batter and gently fold them in.
  • 8.   Step 8: (cooking)
    Heat a knob of butter over low heat in a non-stick skillet.
  • 9.   Step 9:
    Using a pastry bag, pour the batter into the skillet to form small cylinders.
  • 10.   Step 10:
    Cover the skillet and cook for 3 to 4 minutes, depending on the heat. The pancakes should turn golden and become slightly firm.
  • 11.   Step 11:
    Using a spatula, flip the pancakes, cover and cook for another 3 minutes.
  • 12.   Step 12:
    Serve hot with your choice of accompaniment (maple syrup, red fruit coulis, jam, sugar, fruits...)

Notes & Suggestions

  • Note: Do not let the batter rest before using it to cook the pancakes. It is important to cook them immediately when the batter is ready.
