Almond and Ginger Shortbread Cookies

Instructions

  • 1.   Grate the ginger as finely as possible.
  • 2.   Mix:
    - softened butter (preferably)
    - sugar
    - almond powder
    - salt
  • 3.   Add:
    - egg
    - flour
    - ginger
  • 4.   Roll out the dough to a thickness of about 5mm. Do this between two sheets of parchment paper if it sticks too much (or add flour, but I prefer less flour).
  • 5.   Chill the dough (optional) to make it easier to cut and handle.
  • 6.   Cut out cookies using a cookie cutter.
  • 7.   Bake at 150°C (300°F) for 15 minutes (watch carefully!).

    As soon as it turns golden, it's ready!

  • 1 egg
  • 200 g of flour
  • 40 g of fresh ginger
  • salt (according to taste)
