Mushroom and Carrot Curry

Instructions

  • 1.   Slice the carrots into rounds and the mushrooms into slices.
  • 2.   Chop the onion and garlic.
  • 3.   Sauté the garlic and onion in oil.
  • 4.   Add the mushrooms and let them sweat.
  • 5.   Sprinkle with curry and let it "warm up" for 1 minute to allow it to release all its flavors.
  • 6.   Then add the liquid cream. Simmer covered for 20 minutes.
  • 7.   Stir in the vegetables and cook for 20-25 minutes. Add salt.
  • 8.   If the curry is too spicy, add 1 yogurt to the mixture.
  • 9.   Serve with white rice. Sprinkle the dish with fresh coriander and crushed cashews.

  • 300 g of button mushroom
  • 1 tablespoon of curry powder
  • 1 onion
  • 1 garlic clove
  • 1 yogurt
  • 2 tablespoon of olive oil
  • 30 g of cashew nut
  • salt (according to taste)
  • pepper (according to taste)
