Stuffed Zucchini with Goat Cheese and Onions

Instructions

  • 1.   Preheat the oven to 180°C (350°F).
  • 2.   Cut off the top of the zucchinis and hollow them out.
  • 3.   Set aside the flesh. Finely chop the onion and mix it with the flesh.
  • 4.   Heat a little olive oil in a small saucepan, add the onion, sauté for a few minutes, and add the chopped zucchini flesh.
  • 5.   Add a tablespoon of honey and 3/4 of the goat cheese.
  • 6.   Let it cook for a few minutes, stirring frequently.
  • 7.   Season with salt and pepper to taste.
  • 8.   Arrange the zucchinis in an ovenproof dish.
  • 9.   Fill the zucchinis with the mixture and place the remaining goat cheese on top. Drizzle with honey, season, and add some rosemary.
  • 10.   Bake for 25 minutes at 180°C (350°F) and broil for 5 minutes to brown the top.
  • 11.   Serve sprinkled with Espelette pepper.
