1. Preheat the oven to 180°C (350°F).
2. Cut off the top of the zucchinis and hollow them out.
3. Set aside the flesh. Finely chop the onion and mix it with the flesh.
4. Heat a little olive oil in a small saucepan, add the onion, sauté for a few minutes, and add the chopped zucchini flesh.
5. Add a tablespoon of honey and 3/4 of the goat cheese.
6. Let it cook for a few minutes, stirring frequently.
7. Season with salt and pepper to taste.
8. Arrange the zucchinis in an ovenproof dish.
9. Fill the zucchinis with the mixture and place the remaining goat cheese on top. Drizzle with honey, season, and add some rosemary.
10. Bake for 25 minutes at 180°C (350°F) and broil for 5 minutes to brown the top.
11. Serve sprinkled with Espelette pepper.
