Leek and Chorizo Gratin

A perfect recipe for a weeknight dinner or to accompany fish. It is easy, quick, and absolutely delicious.

Instructions

  • 1.   Peel the garlic clove, remove the germ, and cut it into small dice.

    Cut the leeks into 2 cm diagonal slices. Pour olive oil into a casserole dish, heat it up, and add the leeks, thyme, diced garlic, and 20 ml of water.
  • 2.   Preheat the oven to 180°C (350°F).

    Sauté over medium-high heat for 10 minutes, stirring regularly. Then transfer the leeks to an ovenproof dish.
  • 3.   Remove the skin from the chorizo, cut it into cubes, and mix it with the heavy cream and grated cheese. Pour this mixture over the leeks.
  • 4.   Bake for 20 minutes. Then reduce the temperature to 150°C (300°F) and continue cooking for an additional 25 minutes.
