Salmon and Spinach Puff Pastry

Instructions

  • 1.   Preheat the oven to 200°C (400°F).
  • 2.   Sauté the sliced onions and spinach in 1 tablespoon of olive oil in a pan for 10 minutes. Season with a pinch of salt and Herbes de Provence.
  • 3.   Place this mixture on half of a puff pastry. Add a handful of feta cheese and the smoked salmon cut into strips. Fold the pastry in half to form a large turnover. Brush the pastry with egg yolk before baking.
  • 4.   Bake for 20 minutes at 200°C (400°F). Serve with a green salad.

Notes & Suggestions

  • The puff pastry is folded in half, similar to a calzone shape.
