Zucchini Mint Soup

Instructions

  • 1.   Slice the zucchini into rounds (about 1cm thick) and steam them for about 12 minutes.
  • 2.   Blend with yogurt, mint, lemon juice, and olive oil.
  • 3.   Adjust with a little water if needed to achieve the desired consistency.
  • 4.   Season with salt and pepper, then let it cool in the refrigerator.

Notes & Suggestions

  • Tips: When serving, add a touch of curry, plenty of fresh herbs, and slivered almonds for crunchiness!
