Savory Waffles with Sun-Dried Tomato, Pancetta, and Parmesan

Instructions

  • 1.   Start by cutting the pancetta into small pieces, as well as the sun-dried tomatoes. Rinse the basil and finely chop it. Grate the Parmesan cheese.
  • 2.   In a mixing bowl, combine the flour with baking soda or baking powder. Add the milk and eggs, mix well. Then add the pancetta, sun-dried tomatoes, basil, and Parmesan cheese. Mix again. Season with pepper (I didn't add salt because the pancetta, Parmesan cheese, and sun-dried tomatoes are already salty, and since my little one is eating it, I avoid excessive salt).
  • 3.   Preheat your waffle iron. Place 2 tablespoons of the batter onto the iron for each waffle. Close and cook for 8 to 10 minutes.
  • 4.   Serve your waffles immediately, accompanied by a small green salad, for example.
  • 5.   Enjoy your meal.
