The delicious eggplant tatin

Instructions

  • 1.   Preheat the oven to 180°C (350°F).
  • 2.   Slice the eggplants into 1 cm thick rounds.
  • 3.   Sauté them in olive oil with a squeeze of lemon juice until they are well cooked.
  • 4.   Grease a dish and add pine nuts and rosemary.
  • 5.   Arrange the eggplant slices in the dish, alternating with sun-dried tomatoes.
  • 6.   Cover with puff pastry and bake for 25 minutes.
  • 7.   It's delicious!
