SUMMER PESTO LASAGNA

Instructions

  • 1.   Preheat the oven to 200°C (400°F).
  • 2.   Wash and peel the vegetables.
    Slice them thinly.
    Sauté them in a pan with 1 tablespoon of oil.
  • 3.   If you choose to add meat, cook the ground meat in a separate pan.
  • 4.   Slice the mozzarella thinly.
  • 5.   In a baking dish, layer 3 times as follows:
    - 2 lasagna sheets
    - 1/3 of the pesto
    - 1/3 of the vegetables
    - 1/3 of the ground meat
    - 1/4 of the tomato pulp
    - 1/3 of the mozzarella

    Repeat 2 more times.
  • 6.   Finish with a layer of lasagna, tomato pulp, and grated gruyère cheese.
  • 7.   Bake for 20 minutes.
    Serve immediately.

  • 8 lasagna sheets
  • 1 cup of pesto
  • 2 bell peppers
  • 1 zucchini
  • 2 tomatoes
  • 1 eggplant
  • 80 g of gruyère
  • 1 cup of tomato pulp
  • 200 g of ground beef (optional)
  • 1 mozzarella ball
  • salt (according to taste)
  • pepper (according to taste)
