1. For the crumble dough:
Soften the butter.
In a bowl, add the flour, salt, pepper, cold butter cut into pieces, and 1 tablespoon of water.
Mix with your fingers until you obtain a crumbly dough.
Let it rest in the refrigerator.
2. Preheat the oven to 200°C (400°F).
3. Wash the zucchinis, leave the skin on, and cut them into slices.
4. Season the cream cheese with salt and pepper, and sprinkle with rosemary.
5. In individual molds or in a large dish, arrange the zucchini slices, seasoned cream cheese, and pine nuts.
Drizzle some olive oil over the mixture.
Sprinkle with the crumble dough and fresh rosemary.
6. Bake for about 20 minutes.
