Tomato, Goat Cheese, and Olive Clafoutis

Instructions

  • 1.   In a bowl, beat the egg and then add the cornstarch, whisking well.
  • 2.   Mix to eliminate lumps, then add the milk, diced tomato (without the seeds), basil, and olives. Mix well.
  • 3.   Cook in a greased pan over low heat for 20 to 25 minutes, adding pieces of goat cheese on top of the batter. Cover with a lid for the last 5 minutes.
    Alternatively, bake in the oven at 180°C (350°F) for 30 to 40 minutes.
  • 4.   Serve hot or cold with a salad.
