Cod with tomatoes and chickpeas | 2 servings

What to serve to your guests? Try this finely simmered fish in a sauce combining tomatoes and chickpeas, white wine, and saffron. They will be delighted.

Instructions

  • 1.   Finely chop the shallot and garlic, then sweat them in a saucepan with olive oil.
  • 2.   Add the saffron, pour in the white wine, and let it reduce slightly.
  • 3.   Stir in the tomatoes and let it simmer for about 5 minutes, season with salt and pepper.
  • 4.   Rinse the chickpeas under cold water, drain them, and add them to the sauce.
  • 5.   Cut the lemon in half, squeeze the juice from one half and add it to the sauce, cut the other half into quarters.
  • 6.   Season the fish fillets with salt and pepper, then place them in the sauce, cover, and let them cook for about 10 minutes over low heat.
  • 7.   Present and serve with the lemon quarters.

Notes & Suggestions

  • Excellent with sautéed potatoes.
