Instructions

  • 1.   Start this recipe for Spanish rice with peppers, chicken, and lemon by preheating the oven to 180 °C (350 °F). Wash the pepper, remove the seeds, and cut it into strips. Peel and slice the carrots. Peel and quarter the onions. Wash and slice the lemons.
  • 2.   Season the chicken breasts, then place them in a large dish. Cover them with the lemon slices. Add the vegetables all around, season them. Drizzle with a little oil, pour the white wine into the bottom of the dish. Bake for 30 minutes.
  • 3.   Meanwhile, cook the rice in salted boiling water according to the instructions on the package. Drain. After cooking the chicken, remove it from the dish. In its place, add the rice, olives, chopped parsley, and a few pinches of chili flakes, then mix. Place the chicken pieces on top again and serve immediately.
