Tomato and Basil Bruschettas

Soaking the tomatoes in salt enhances their flavor. But if you're short on time, you can skip this step, especially if the tomatoes are freshly picked.

Instructions

  • 1.   Wash, seed, and dice the tomatoes. Sprinkle them with salt and let them drain in a colander for 30 minutes.
  • 2.   Toast the bread slices for 3 minutes under the broiler (or in a toaster).
  • 3.   Wash and chop the basil leaves.
  • 4.   Rub the bread slices with the peeled and halved garlic clove. Drizzle each slice with olive oil.
  • 5.   Place the diced tomatoes on top. Add salt if needed, season with pepper, sprinkle with basil leaves, and drizzle with a little more olive oil. It's ready!

Notes & Suggestions

  • You can add a few slices of mozzarella.
