Instructions

  • 1.   Start this recipe for cod in parchment with salsa verde by preheating the oven to 210 °C (410 °F). Lightly brush 6 squares of parchment paper with oil. Wash and slice the lemon into thin rounds. Rinse and pat dry the fish fillets.
  • 2.   Wash and dice the zucchini. Spread them on the parchment squares. Add the fish fillets, season with salt and pepper, and place the lemon rounds on top. Seal the parchment tightly and place them on a baking sheet. Bake for 15 minutes.
  • 3.   Meanwhile, wash, dry, and chop the parsley leaves. Put them in a small food processor with the capers, pickles, oil, and 1 tablespoon of the vinegar from the jar. Blend until you obtain a smooth mixture.
  • 4.   Arrange the parchment packets on plates and open them. Add a generous spoonful of salsa verde sauce to each one and serve immediately.
