1. In a bowl, mix the ricotta, egg, parsley, chopped mint, and 2 dried tomato petals.
Add the flour and milk. Season with salt and pepper.
2. Heat the oil in a deep fryer. Once it is hot, shape small balls or quenelles using 2 spoons.
Fry the balls in the oil for 5 minutes, until they turn a beautiful golden color.
3. Drain the fritters and place them on absorbent paper.
Enjoy the fritters hot or warm.
