1. Preheat the oven to 350°F (180°C).
2. Peel and chop the onion.
3. Cut the peppers in half, remove the seeds and white part, then cut them into small squares. Wash the zucchini, trim the ends, then grate them coarsely.
4. Melt the onion in the oil. Add the peppers. Let them cook for 5 minutes. Then add the paprika. Season with salt and pepper.
5. Mix everything well and let it cool.
6. Unroll the dough in the tart pan.
7. Remove the parsley leaves and chop them.
8. Beat the 2 eggs with the grated cheese and parsley. Incorporate this mixture into the vegetable preparation.
9. Spread the filling on the bottom of the tart.
10. Bake in the lower part of the oven for 35 to 40 minutes. Unmold the tart onto a serving dish and serve it hot.
