Offal Skewers

Instructions

  • 1.   Cut the liver. Cut the bell pepper into cubes. Cut the tomatoes in half. Remove the seeds and cut them into cubes. Peel the onions. Remove the stems and wash the mushrooms with lemon water.
  • 2.   Prepare your skewers by alternating these ingredients evenly. Season with salt and pepper. Sprinkle with Herbes de Provence.
  • 3.   Place the skewers on the griddle plate. Flip the skewers frequently for even cooking. The liver should remain pink on the inside.

Notes & Suggestions

  • Serve with plain rice, if desired, with a touch of harissa.
