Lazy Egg Muffin

Instructions

  • 1.   Cut the muffin in half and toast it in a toaster (or in the oven at 150°C/300°F).
  • 2.   Meanwhile, cook the egg:
    Lazy method: crack the egg into a ramekin (approximately the same diameter as the muffin), season with salt and pepper, pierce the yolk, cover with a slice of bacon, and cook in the microwave for 30 to 60 seconds: keep an eye on it (the yolk might explode, and that would be a disaster).
    Alternatively, cook the egg sunny-side up, season with salt and pepper, and flip it towards the end of cooking to achieve a creamy yolk texture. Quickly grill the bacon slice in a hot pan.
  • 3.   Assemble the sandwich: Spread ketchup on the bottom half of the muffin, top with a slice of cheese, and place the cooked egg and bacon slice on top.
