Fish and Vegetable Parcels

Parcels are fun to make, quick, full of flavors, and accessible to everyone! For a quick version, this recipe also works well with frozen vegetables.

Instructions

  • 1.   Preheat the oven to 210°C (410°F).
    Wash the tomatoes, zucchini, and bell pepper.
    Peel the carrot.
    Remove the seeds from the bell pepper and cut all the vegetables into small cubes (or julienne).
    Cut the ½ lemon into very thin slices.
  • 2.   Place the cod fillet in your silicone parcel. If you don't have one, use parchment paper.
    Cut a large square of paper and place the fish in the middle.
    Place the thin lemon slices on top of the fish. Spread the vegetables in the parcel.
    Drizzle some olive oil over the ingredients. Season with salt and pepper.
    Close the parcel.
  • 3.   If you are using parchment paper, close the parcel using one or more toothpicks, for example.
    Bake for 15-20 minutes.
