1. Finely chop the onion. Cut the avocado flesh into 1 cm cubes, place them in a bowl and drizzle with lemon juice. Blanch the tomatoes for 10 seconds, then refresh them under water. Peel them, cut them in half and remove the seeds. Cut the pulp into very small cubes.
2. Heat the oil in a non-stick skillet. Add the onion and cook for 3 minutes, stirring. Add the curry, garlic, mix for 30 seconds, then add the tomatoes and cook for 2 minutes. Then add the shrimp, avocado and its marinade, coriander, garam masala and salt. Mix for 1 minute and serve immediately.
