Oven-Roasted Turkey Thighs and Grilled Summer Vegetables

Instructions

  • 1.   Peel and slice the onions.
  • 2.   Clean, remove the seeds, and cut the bell pepper into strips.
  • 3.   Clean and cut the tomatoes into quarters.
  • 4.   Peel, remove the seeds, and cut the zucchini into strips.
  • 5.   Preheat the oven to 200°C (400°F).
  • 6.   Season the turkey thighs with salt and pepper, then place them in an oven-safe dish.
  • 7.   Add the vegetables and thyme on top.
  • 8.   Drizzle with a little olive oil, then pour a glass of water into the bottom of the dish.
  • 9.   Bake for 40 minutes, flipping the turkey thighs halfway through cooking.
  • 10.   Serve immediately after removing from the oven.
