LIGHT CHICKEN CURRY

Instructions

  • 1.   Peel and finely chop the onion and shallot.
  • 2.   Peel, core, and cut the apples into small pieces. Set aside.
  • 3.   Cut the chicken breasts into pieces.
  • 4.   Heat the oil in a casserole dish, then add the onion and shallot and cook for 10 minutes, stirring regularly.
  • 5.   When they are golden brown, add the chicken pieces and apples and cook for 5 minutes.
  • 6.   Then add the coconut cream, reduce the heat, and cook for an additional 10 minutes, stirring well.
  • 7.   Add the curry powder, a bit of chili, salt, and pepper, and stir vigorously. Finish by cooking for another 5 minutes.
  • 8.   Serve immediately with plain white rice.

Notes & Suggestions

  • Can also be served with tagliatelle pasta.

  • 500 ml of coconut cream
  • 1 tablespoon of curry powder
  • 1 pinch of Cayenne pepper
  • 1 tablespoon of olive oil
  • salt (according to taste)
  • pepper (according to taste)

    Do not put the shallot at the same time as the onion otherwise it will burn. My children love this recipe. Even with chili.
