1. Cut the tomatoes in half, sprinkle them with salt, and place them cut side down on a plate to let them drain for about 15 minutes.
2. Blend the parsley, garlic, herbes de Provence, and breadcrumbs finely.
3. Take a large skillet or 2 medium ones. Heat a little oil in it, place the tomatoes cut side up, and sear them for 2 minutes over high heat. Flip them over, season with salt and pepper, and transfer them to a baking dish.
4. Cover them with the parsley, garlic, and breadcrumb mixture. Drizzle with a little oil.
5. Bake in the oven at 220°C (428°F) for 20 minutes.
