Light Apricot Clafoutis

Instructions

  • 1.   Wash the apricots, cut them into halves and remove the pits.
  • 2.   In a bowl, whisk the egg and agave syrup. Add the cornstarch and whisk well to eliminate any lumps. Add the milk and mix.
  • 3.   Pour the mixture into a skillet (or a baking dish), lightly grease the surface, and place over low heat. Add the apricot halves. Sprinkle with pistachio pieces.
  • 4.   Bake for 20 to 25 minutes. Cover with a lid for the last 5 minutes.
  • 5.   Bake in the oven at 180°C (350°F) for 30 to 40 minutes.
