Crustless Eggplant and Ground Meat Quiche

Instructions

  • 1.   Start by peeling and finely chopping the onion. Cook it in a pan with 1 tablespoon of oil.
  • 2.   Meanwhile, wash and cut your eggplants into small pieces. Add them to the onion. Let them cook for 5 minutes.
  • 3.   Crumble your ground meat and add it to the eggplants. Continue cooking until the meat is cooked.
  • 4.   In a bowl, crack the eggs, add the tomato sauce and flour, season with salt and pepper, and add the spices. Mix everything together.
  • 5.   Add the cooked vegetable/meat mixture to the egg/flour mixture and mix well.
  • 6.   Pour your mixture into a 4-person tart pan.
  • 7.   Bake for about 35 minutes at 180°C (350°F). Let it cool slightly after removing from the oven.

  • 1 onion
  • 2 eggplants
  • 250 g of ground beef
  • 1 tablespoon of oil
  • 1 pinch of garlic powder
