1. Start by peeling and finely chopping the onion. Cook it in a pan with 1 tablespoon of oil.
2. Meanwhile, wash and cut your eggplants into small pieces. Add them to the onion. Let them cook for 5 minutes.
3. Crumble your ground meat and add it to the eggplants. Continue cooking until the meat is cooked.
4. In a bowl, crack the eggs, add the tomato sauce and flour, season with salt and pepper, and add the spices. Mix everything together.
5. Add the cooked vegetable/meat mixture to the egg/flour mixture and mix well.
6. Pour your mixture into a 4-person tart pan.
7. Bake for about 35 minutes at 180°C (350°F). Let it cool slightly after removing from the oven.
