Cod fish balls with pea and zucchini pesto mashed potatoes

Instructions

  • 1.   Blend 90g (3/4 cup) of oat flakes to turn them into flour. Set aside.
  • 2.   In your blender, blend the fish cut into small pieces with the shallot, eggs, pesto, salt, and pepper.
  • 3.   In a bowl, mix the obtained mixture with oat flour and add the 30g of oat flakes.
    Place in the fridge for 10 minutes to facilitate shaping the balls (this is not mandatory).
  • 4.   Shape your 20 balls and bake in the oven for 20 minutes at 180 degrees Celsius (350 degrees Fahrenheit).
  • 5.   Meanwhile, prepare your mashed potatoes with:
    ▪️2 zucchinis.
    ▪️400g of frozen peas.
  • 6.   Wash, cut, and cook your zucchinis in a non-stick pan.
  • 7.   In parallel, cook your peas in boiling water.
  • 8.   Blend the cooked vegetables together and season.
  • 9.   In a shallow plate, arrange the mashed potatoes and place 5 balls on top.
